banana, honey, cinnamon + walnut mini loaves

I recently purchased some adorable Christmas themed mini loaf cake cases from dotcomgiftshop and couldn't wait to try them out, so decided to make some yummy banana, honey and cinnamon muffins (which instantly become mini loaves)

INGREDIENTS:

-125g Butter
-75g Caster Sugar
-50g Brown Sugar
-2 Eggs
-3 Bananas
-50ml Milk
-25g Chopped Walnuts (optional)
-Drop of Vanilla Essence
-3 tsp Honey
-125g Self Raising Flour
-3/4 tsp cinnamon

STEP ONE:

Firstly cream the two sugars and butter together in a bowl until light and fluffy.



STEP TWO:

Now add and mix in one egg at a time until the mixture is again, light and fluffy!

STEP Three:

In another bowl mash the bananas, milk honey and vanilla essence together (I used a potato masher) then pour this into your mixture and mix thoroughly to distribute the bananas.  


STEP FOUR:

Finally sift in the flour and cinnamon and stir through the wet mixture until all the flour is mixed in. An optional step is to stir in some chopped walnuts.



BAKE:

Add the mixture to individual cases and bake in an oven at 160 degrees for 15 minutes or until cooked through (test with a kebab stick or knife and see no sticky mixture comes out)


FOR THE ICING:

-2 tbs Honey
-1/2 tsp cinnamon
-Spoon of butter
-Icing Sugar

STEP ONE:

Mix the butter, honey and cinnamon together then add small amounts of icing sugar at a time until the desired texture is reached.  Make sure the cakes are completely cool before using the icing otherwise the butter will melt. You can pipe this on, or just spread across like I did, I then decorated with a walnut!
